Dussoruth Research Scientist\/Senior Research Scientist (Fruit Division) gave a detailed presentation covering each step from harvest to final product packaging, highlighting key critical points at every stage of the process. Mrs. S. Subramaniam Research Scientist\/Senior Research Scientist (Fruit Division) also shared valuable insights on kernel drying, roasting, and packaging.<\/p><p>Participants were given a guided tour of the macadamia processing area, where they observed the drying (curing) process using simple equipment, with a focus on air flow, heat, and humidity control to ensure quality nuts. A demonstration of a macadamia nut cracker was also conducted, showcasing how the kernels (edible part) are separated from the nuts.
