Oyster Mushrooms (Pleurotus spp.) are edible, nutritious and mildly flavoured mushrooms with several health benefits including cholesterol reduction, anti-inflammatory and anti-cancer properties. The Pink Oyster mushroom (Pleurotus salmoneostramineus) also known as Pink Flamingo Oyster mushroom, grows well in warm climates and produces clusters of medium to large, pink coloured caps. It has a chewy texture that adapts better to some dishes requiring fibrous textures. Immature fruits have deeper pink colour that can lighten upon cooking. When cooked until crispy, the mushroom has a meaty texture.

Shelf Life: Depending on the type of pack used, pink oyster mushroom can be kept for 5 to 13 days at 4-5 °C. Optimal storage is achieved in 30 – micron LDPE (Low-density polyethylene
